Custard

The finished custard.

4 C milk (any kind), scalded
1/2 C sugar
6  whole eggs
1 tsp. vanilla
1/4 tsp. nutmeg
1/8 tsp. cardamon, optional, more if you like

Scald the milk over medium heat being careful not to scorch. Add the sugar and stir to dissolve. Set aside to cool slightly.

Crack the eggs into a large measuring dish and whisk till frothy. Add the nutmeg and cardamon.

Stir a small amount of the warm milk into the eggs whisking well to keep the mixture from clumping (it will cook the eggs if you add too much hot fluid too fast). Continue adding the milk while whisking. make sure it is mixed well.

Pour into a 2 1/2 qt. casserole. Set the casserole into a glass baking dish at least as tall as the casserole. Place into the heated oven, pour hot water into the baking dish to surround the casserole dish.

Bake at 325 for about an hour. It is done when a sharp knife inserted near the middle comes out clean.

Makes 4 hearty servings. Serve warm or chilled.

When I make this for my dad and Bro they eat the whole thing!
