Part of todays garden harvest. Summer squash, peppers, tomatoes, eggplant, , cucumber, okra
Still at least two hundred pounds of food to harvest from the garden before the first frost. There is about 50 or 60 pounds of Butternut squash on the vine, some okra, summer squash, plenty of good tomatoes, scads of peppers, eggplants, more basil than any sensible person would have, and the sweet potato crop. There might be a couple more watermelons but its dicey.
A mess of garden produce picked for Gene along with a bag of tomatoes. He uses basil like most people use lettuce. .
Eggplant, peppers, a large onion, a zucchini, and fresh basil all from the garden. Sauteed along with garlic. Tossed together with fresh basil and tomatoes, olive oil and balsamic, salt & pepper, a pinch of red pepper flakes. Topped with crumbled feta and served warm.
The finished dish. A glass of wine and a slab of bread and a meal fit for anyone.
I would like to note the pretty vase of roses on the table. Sent from a friend for Marideth to enjoy when she arrives home.
